Excellent as a container plant and heat-tolerant, ginger is a wonderfully low maintenance plant. Mature ginger rhizomes can be harvested four to six months after planting. Or, harvest sooner (at 4-6 weeks) for a milder, more tender product referred to as "baby ginger," which is taking off in culinary circles.
