- winter careDahlias should be dug and stored anywhere the ground freezes over winter. Dahlias should be dug after the first frost but before a hard freeze. Tubers can be divided in the fall or spring, provided each tuber division contains at least one eye. Tubers should be rinsed off, dried, and stored in a dry, dark, cool, frost-free environment in a medium like vermiculite or dry wood chips. This environment should be an area that maintains a temperature between 37 and 47 degrees F. Dahlias should be checked periodically during the winter and rotting tubers should be discarded. If tubers are still firm and plump no action is necessary. If tubers begin to shrivel, shrink and wrinkle, they have started to dry out and should be lightly misted. Do not overwater dormant tubers or rot will occur.
